Skinny Truffles

1/2 cup + 2 tablespoons unsweetened cocoa powder
1 cup sifted confectioners sugar (more as needed)
1/2 cup light cream cheese (Neufchatel cheese) at room temperature
1/2 teaspoon almond extract (try mint extract or a strongly flavored liqueur/liquor like Grand Mariner or Yukon Jack)

Combine everything except for 2 tablespoons of cocoa. Use a food processor, a hand mixer or elbow grease to create a smooth, lump free but rather stiff mixture.

If you have a loose, runny or thin mixture add more confectioner sugar. You need a good stiff mixture that will hold a shape. (Often I use more confectioners sugar than the I think I could possibly need, see Mostess Cupcakes.)

Using your own clean hands, roll spoonfuls of this mixture into a ball. Roll the ball in the reserved 2 tablespoons of cocoa. Refrigerate overnight and enjoy. I found that these keep for a rather long time, but use before 10 days have passed.

Makes 24 truffles. 1 WW point each (or the caloric equivalent of 1/2 a slice of bread). And just so ya know, you could eat 18-30 of these a day (and nothing else) and lose weight depeneding on how much you weigh now.

With luck your truffles won't look anything like this photo, because these are brownies.
